As for the question of why we chose to use manual building of the levels instead of procedural generation, I'm not entirely sure because I wasn't there for that decision process, but I think the idea was that procedural generation at the time seemed to be a lot more effort for the work that we're putting into.
Maybe retroactively we can say that it could have been better, but
Honestly, we're managing pretty fine.
